Alejandro Ángeles Rebolloso, born in Torreón, Mexico, is the creative soul behind our kitchen. His passion for gastronomy began at an early age, inspired by the rich culinary tradition of her native country. However, his story took an unexpected turn when he came to study in the Basque Country and met his current wife, prompting him to settle in Spain and immerse himself in European culinary culture.
Before joining our team, Alejandro worked at the Aramendi, the Basuki and various taquerias in Bilbao, where he honed his skills and developed a unique style that fuses Mexican flavours with contemporary techniques. Today, Alejandro delights us in our restaurant with an innovative proposition that combines the best of both culinary traditions.
